English Style Cucumber Sandwiches

My son loves cucumbers. He also loves finger sandwiches. I will often mix and match them so he gets an appropriate amount of protein and vegetables. In doing so, I have the opportunity to teach him a little about the English tea time culture.

Ingredients:

  • 4 Slices of Potato Bread or White Bread
  • 1 English Cucumber
  • 1 Cup of Light Cream Cheese
  • 3 Sprigs of Fresh Dill
  • 1/3rd of a Lemon
  • Dash of Salt and Pepper

Cooking Instructions:

Slice the cucumbers so they are 1/8” thick.

To make the spread, find a small bowl, add the cream cheese, lemon, and salt/pepper. Mince and add the dill, add it to the bowl, and mix.

Thinly spread the mixture on one slice of bread. Add an appropriate layer of cucumber evenly. On another slice of bread, thinly spread the mixture. Place the second piece of bread on top to make the sandwich. Repeat this process with the last two pieces of bread.

Finally, cut the crust off the bread and evenly cut the sandwich fingers. I tend to cut them into three parts, so they are easy to grab and eat with a cup of tea.

Optional: Make your favorite egg salad recipe as the spread and repeat the sandwich making process.
